Shrimp Fra Diavolo

This wonderful and flavorful recipe is a personal favorite of mine. I love Italian food and I love spicy food (within reason) so this one has just enough kick (you can adjust it as you like) to make it a blast to eat. Typically, it is made with shrimp but you can use fish or chicken if you prefer. Another typical thing with this dish is the use of a long noodle, like a fettuccini or linguini but again, you can use the pasta of your choice. Ravioli works particularly well with this dish, as does tortellini. This recipe has a lot of room for modification and play with it to make it how you like. Just remember that cooking the tomato paste with the onion and garlic mixture is the one thing you should not change. This builds the flavor base so don't skip it! Ingredients
  • 1 lb Shrimp, shelled and deveined
  • 2 tsp crushed red pepper flakes, divided
  • 3 tbsp extra virgin olive oil, divided
  • 1 medium yellow onion, chopped
  • 5 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1/2 cup dry white wine
  • 1 15oz can Diced fire roasted tomatoes. 'Muir Glenn' brand preferred
  • 2 tsp dried oregano
  • 1/2 cup chopped fresh flat leaf parsley
  • Salt and pepper to taste
Instructions
  1. Shell and devein the shrimp and pat dry. Season with salt and 1 tsp crushed red pepper flakes
  2. Heat 1 tbsp olive oil over medium heat in large skillet. Add shrimp and cook 45 seconds to 1 minute. As soon as they show any color remove the shrimp and place in a bowl for now. They will finish cooking at the end, when you add them back to the pan.
  3. Heat another 2 tbsp oil over medium heat and sauté onion for about 3 minutes. Add garlic and cook another 2 minutes.
  4. Add oregano and additional 1 tsp of red pepper flakes and cook another minute
  5. Add 1 tbsp tomato paste and mix well into onion mixture. Cook about 1minute more to roast the tomato paste in the pan. This step is very important. Onion mixture will get sticky when it's cook enough
  6. Add wine and the can of diced tomatoes and bring to a simmer. Cook for about 10 minutes to reduce and thicken the sauce.
  7. Add shrimp, cooked pasta and heat through. Finish with fresh parsley and serve immediately
